Grilled Eggplant with Feta

Ingredients
2 large eggplants, sliced 1⁄2 inch thick
Bowl & Basket Specialty Olive Oil
2 tsp Bowl and Basket garlic and herb seasoning
1/4 cup crumbled Bowl & Basket Specialty Feta Cheese
Directions
  1. Spread sliced eggplant out in an even layer on 1 to 2 large baking sheets.
  2. Sprinkle liberally with salt on each side and let sit for 10-15 minutes.
  3. Wipe off accumulated water and the excess salt. Drizzle eggplant with olive oil and sprinkle with seasoning.
  4. When ready to cook, preheat grill to 425 and be sure that grill grates are clean and well oiled.
  5. Grill eggplant for about 3-5 minutes per side, or until golden brown and grill marks have formed.
  6. Remove from grill and top with crumbled feta and additional olive oil if desired.
